Homemade Coffee Creamer

This recipe is simple perfection. My sister sent her recipe to me multiple times before I finally realized I needed to just publish it here so I couldn't lose it again! The recipe uses whole milk, heavy cream, powdered sugar and vanilla extract. It tastes like melted vanilla ice cream and if you taste it before adding it to your coffee, you miiiight just be tempted to skip the coffee. Enjoy!

Ingredients

  • 2 cups whole milk
  • ½ cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 tablespoon good vanilla extract

Instructions

  • Combine all ingredients in a large (1 quart) mason jar. Stir to dissolve sugar or securely add the lid and shake gently until sugar is dissolved.
    Store in the fridge. Shake again as needed.
    This recipe is handy because you don't need to make a simple syrup (no cooking required) and it stored right in the jar you make it. It's excellent for when you are without a full kitchen (but still need the coffee!!).

Notes

Yield: The recipe makes 2.5 cups of creamer. Nutrition information is (as always) an estimate and is for 2 tablespoons of creamer. 
Personally, I tend to use a lot more than 2 tablespoons since I like roughly a 50/50 mix of creamer and coffee. 
You can easily halve or double the recipe as needed.
Storage: Keeps for 1 week in the fridge (assuming that fresh dairy products are used of course). If you won't use it that quickly, make a half batch. 
Vanilla extract: Use a high-quality (not imitation) vanilla extract for the best flavor. Lower quality extracts still work, but lack the robust flavor of a good vanilla.
