Hey friends! This is a post I’ve been meaning to round up for a while! I started making single serving cookies on kind of a whim.
I thought, hey, Crumbl is selling these gourmet cookies and one of the really appealing factors is that you can grab just one, enjoy it and move on.
Normally, when we bake cookies at home, the recipes make a full batch (around 24) of cookies. This is a lot if you don’t have a big family helping you eat them! And even though cookies freeze well, it’s still impractical to make a whole batch if you only want one or two.
So, I started creating these “just one” cookie recipes! Each recipe makes ONE bakery-size cookie that is perfect for a delicious dessert for one (or even two if you like).
Ratios change quite a bit when you reduce recipes down to these small amounts, so I’ve tested each recipe multiple times to get things just right!
Some Quick Tips for Single Cookie Baking Success
One of the biggest differences between these recipes and standard-yield recipes is that you will never use a whole egg.
Instead, you’ll whisk one up and then measure the required amount from that. Use the rest of the egg for scrambled eggs, an egg wash for another recipe, or to make more solo cookies.
I also suggest using a scale if you can to ensure that quantities are accurate. If you don’t have one, measure flour in particular very carefully. Aerate the flour gently with a whisk, spoon into your measuring spoon, and level off with a butter knife.

My Cranberry-Lemon White Chocolate Cookie is my latest edition to the single cookie lineup and I love it! It’s a soft cookie (huge–like bakery-size) with this amazing crisp exterior from rolling in sugar before baking. The triple-flavor of cranberry with the lemon and white chips that become lightly toasted is dreamy!

Chewy Bakery-Style Chocolate Chip Cookie
If you want a classic chocolate chip cookie with tons of melty chips encased inside a soft-and-chewy cookie base, this is your ticket! The cookie is bakery-size so you can eat it all or split it with a friend if you want. It’s got those cracks and crackles on the edges that are crisp followed by a soft interior. Just go make it and feel better.

Frosted Sugar Cookie for One
If you think that making single serving cookies means you have to skip the frosting, think again! This single serving frosted sugar cookie is inspired by Crumbl’s pretty pink sugar cookie and includes a little almond extract for that classic bakery flavor. If you don’t like almond though, no problem, just leave it out!

Single Serving Peanut Butter Cookie
If you love peanut butter cookies, you’ll definitely want to try my Peanut Butter Cookie for One! It’s perfect on its own or topped with a scoop of ice cream for an extra-indulgent treat.

Snickerdoodle Cookie for One
I love Snickerdoodle cookies, but they include an ingredient that I don’t always have in my kitchen–cream of tartar!
